Spaghetti with Zucchini and Mint

Serves: 4

IngredientsSpaghetti with Zucchini and Mint

  • 2 tablespoons extra virgin olive oil
  • 400g fresh Cucina spaghetti
  • 3 medium zucchini cut into strips
  • 1 tablespoon lemon juice
  • pinch of chilli flakes
  • 3 tablespoons of chopped fresh mint
  • salt and pepper to taste
  • finely grated parmesan or pecorino to serve


Cook the pasta as per instructions - immediately before draining put the grated zucchini into the pot with the pasta and then drain straight away. This saves on dishes and effectively blanches the zucchini - make sure that you do this quickly so that the zucchini is in the boiling water for only seconds. Once drained, toss through the remaining ingredients - mint, lemon juice, olive oil, chilli flakes, salt and pepper. Divide between serving plates and sprinkle with grated pecorino or parmesan. Serves 4
